The Flat Iron is one of the most surprising discoveries in modern butchery. It didn’t gain popularity until the early 21st century, when American butchers and researchers developed a technique for properly cutting this cut from the shoulder blade.

It comes from a muscle located just below the back, within the shoulder blade. This muscle is not heavily worked, which results in a tenderness comparable to the best cuts, such as the tenderloin—while retaining the distinctive flavor typical of the shoulder blade.

Visually, it stands out for its flat, rectangular shape and delicate marbling of fat extending across the entire surface of the meat. The name is no coincidence—the cross-section of the finished steak resembles the shape of an old iron.

Perfect for a very hot skillet or grill. Cook briefly, to medium-rare. After cooking, let the meat rest for a few minutes and always slice it across the grain.
